Spring salad


  • Serves 4
  • 15 Minutes


  • 1 fresh lettuce
  • ½ kg. Cherry tomatoes
  • 1 fresh cucumber
  • 1 bunch of rocket
  • 1 green & 1 red pepper
  • 1 avocado
  • ½ cup of croutons
  • Parmesan flakes

For the dressing

  • 5 tablespoons olive oil
  • 5 basil leaves
  • ½ tablespoon mustard
  • 2 tablespoons balsamic vinegar
  • salt

Spring salad


A colorful, delicious, hearty salad for any taste!


  • Cut the rocket, the lettuce and the peppers in thin strips. Cut the cherry tomatoes in the middle and the cucumber in small cubes. Cut half of the avocado in thick pieces and keep the other half for the dressing. Mix all the vegetables in a salad bowl.
  • Mash the avocado with a fork and mix it with the rest of the dressing ingredients in a jar. Close it tight and toss.
  • Pour all vegetables, stir once, add the croutons and sprinkle with parmesan flakes.
