Quiche Lorraine with spinach & cheeses

INGREDIENTS

For the dough:

  • 200 g all-purpose flour
  • 100 g butter
  • 1 egg
  • 2-3 tsp water
  • A pinch of salt

 

For the filling:

  • 200 g spinach
  • 1 small onion
  • 10 g butter
  • 1 egg
  • 100 g ricotta or cream cheese
  • 100 g graviera cheese, cubed
  • 50 ml heavy cream
  • Nutmeg
  • Salt & pepper

DIRECTIONS

  1. In a bowl, combine the flour, salt and butter cut into small cubes.
  2. Rub the mixture together lightly and add the egg and water. Mix the dough until it forms a smooth ball. Wrap the dough in plastic wrap and allow it to rest in the refrigerator for ½ hr.
  3. Place a baking paper sheet in the tart tray, roll out the dough with a rolling pin and place the dough in the pan. Preheat the oven to 180 C and place a piece of baking paper over the dough. Fill with legumes to prevent bubbling.
  4. Bake the tart shell for about 30 mins. Remove the baking paper with the legumes and brush the tart with a little beaten egg. Bake for another 10 mins.
  5. Finely chop the spinach and onion and sauté in a frying pan with the butter.
  6. In a bowl, beat the egg and add the cheeses, spinach, heavy cream and spices.
  7. Pour the filling into the tart shell and bake at 180 C for about 30 mins.
