Pork shank with orange juice
and mustard and celery root purée

INGREDIENTS

  • 2 pork shanks, about 1.2 kg each
  • 2 onions, thinly sliced
  • 2 tbs honey
  • 300 ml beef broth or water
  • 300 ml orange juice
  • 100 g whole grain mustard
  • 1 orange, zest only
  • Fresh sprigs of thyme or rosemary
  • Salt and freshly ground pepper

 

For the marinade:

  • 3 litres water
  • 120 g salt
  • 60 g sugar
  • 2-3 bay leaves
  • 5-6 peppercorns
  • Sprigs of thyme and rosemary

 

For the celery root purée:

  • 600 g celery root, peeled and cut into pieces
  • 200 ml milk
  • 350 ml heavy cream
  • 2 tbs fresh chives, finely chopped
  • Salt and freshly ground pepper

DIRECTIONS

  1. Put the pork shanks in a deep bowl. Heat the marinade ingredients and pour over the shanks.
  2. Cover the bowl with cling film and refrigerate overnight.
  3. Strain the shanks, dry them and discard the marinade. Rub the shanks with salt and pepper. Put them in a deep roasting pan or Dutch oven with the sprigs of thyme and rosemary arranged on the bottom. Brush with the mustard and honey.
  4. Add the onions, orange juice and broth to the pan. Cover the pan or Dutch oven with aluminium foil and cook for 2-2½ hrs at 160 C.
  5. Remove the aluminum foil and continue roasting, regularly basting the shanks with the juices in the pan.
  6. Cook for 40-50 mins more or until the skin is golden and crispy.
  7. Remove the shanks from the pan, strain the juice and bring to a boil over high heat until about half remains.

 

For the celery root purée:

  1. Place all the ingredients in a pot, cover and cook over low heat until the celery root is tender.
  2. Remove from heat and beat with an immersion blender (if you prefer, press the celery root through a sieve). Sprinkle with chives and serve.
  3. If you are not serving it immediately, cover with plastic wrap.
