Christmas ginger biscuits

INGREDIENTS

  • 340 g butter at room temperature
  • 300 g sugar
  • 2 large eggs
  • 2 tsp powdered ginger
  • 570 g flour
  • 1 tsp baking powder

 

For the glaze:

  • 125 g powdered sugar
  • 1-2 tbs water or milk

DIRECTIONS

  1. In a mixer, beat the butter and sugar together for 2-3 mins.
  2. Add the eggs and powdered ginger and continue beating. Gradually add the flour and baking powder, lowering the speed.
  3. Divide the dough into 2 parts and roll out into 2 sheets about 1 cm thick. Lay each sheet of dough on non-stick parchment paper, cover and refrigerate for 1 hr.
  4. Preheat oven to 175°C. Cover an oven pan with baking paper.
  5. Cut the dough with Christmas cookie cutters and arrange the pieces on the oven pan.
  6. Bake for 10-12 minutes until the biscuits begin to brown (do not over-bake!).
  7. When completely cooled, mix the powdered sugar with water and decorate the biscuits with a pastry bag.
  8. Allow to dry and serve.
