Burger with chaloumi cheese
and baked butternut squash

INGREDIENTS

  • 4 brioche burger buns
  • 4 tbs mayonnaise
  • 1 butternut squash
  • 4 slices chaloumi or talagani cheese
  • 3 tbs olive oil
  • 2 tbs balsamic vinegar
  • A pinch of fleur de sel
  • 1 cup rocket leaves
  • 200 g cherry tomatoes, cut into quarters
  • To serve, tender lettuce leaves or fried potatoes

DIRECTIONS

  1. Cut the neck of the squash into 8 round slices, about 1.5 cm thick.
  2. Cut a piece of non-stick parchment paper to fit the baking pan. Spread over the pan and arrange the squash slices on it. Brush with olive oil and balsamic vinegar and sprinkle with fleur de sel.
  3. Bake for about 20 mins at 180°C until slightly softened.
  4. Heat a griddle pan and grill the cheese slices for 1-2 mins on each side.
  5. Set up the burger by spreading mayonnaise over the bottom half of the bun, then rocket leaves, 2 slices of baked squash, 1 slice of grilled cheese and finally some sliced cherry tomatoes, and cover with the top half.
