Baked salmon fillets with lime and salad

INGREDIENTS

  • 6 salmon fillets, with skin
  • 2 tbs lime juice
  • 1 lime, whole
  • 60 ml coconut milk
  • 1 tbs fish sauce
  • 1 tsp brown sugar
  • 2 tbs sesame oil
  • 3 tbs sesame seeds
  • 100 ml white wine
  • Tender lettuce leaves
  • 1 cucumber, peeled into thin ribbons
  • 2 tbs fresh chives, finely chopped

DIRECTIONS

  1. Preheat oven to 200°C.
  2. For the dressing: in a small pot over medium heat, mix the coconut milk, lime juice, fish sauce and sugar together for 1-2 mins and set aside for serving.
  3. Place the salmon fillets, skin side down on a piece of Baking paper. Brush with sesame oil and wrap the foil around them to hold the juices without sealing the top. Add the wine and bake at 200 C for 10 mins, turning on the grill for the last 2 mins.
  4. Turn the fillets over with a spatula. Brush with the rest of the sesame oil, sprinkle with sesame seeds and fleur de sel, and continue cooking under the grill for 4-5 mins. Sprinkle with fresh chives.
  5. Serve the fillets with the dressing, lettuce leaves and cucumber ribbons.
