Seabream with vegetables

  • 4 seabream (gutted)
  • 2 potatoes (cut in wedges)
  • 2 carrots (sliced)
  • 2 courgettes (diced)
  • 1 onion (finely chopped)
  • 4 tablespoon olive oil
  • 1/3 bunch parsley (finely chopped)
  • juice of 1 lemon
  • salt
  • freshly ground pepper

Seabream with vegetables


A light and healthy dish that everybody will love, especially if served in the non-stick paper it was baked in.


In a bowl mix the vegetables with the olive oil and add salt and pepper. Cut four 50cm-long pieces of FINO non-stick paper and put equal portions of vegetables on each piece. Season the sea bream and place on top of the vegetables. Fold the paper lengthwise and twist the edges to seal. Place in a tray and bake in preheated oven at 160°C for 1 hour 15 minutes.

Chef's comment

It can be served as a main dish. Combines well with garlic sauce. Follow this recipe to cook practically any big fish, adding or removing vegetables. Baking in FINO non-stick paper is doubly beneficial. First, food tastes better since all flavours are locked in the paper, and second, you will always have a clean oven after baking!
